1. Original salad in balls


  • A glass of boiled rice,
  • Bank conserv. fish (I have pink salmon),
  • Eggs var. 3 pcs.
  • Mayonnaise-3 table. spoons.
  • Dill bundle,
  • Raw carrot-1 pc,


Rice + fish + proteins + mayonnaise, salt, pepper. To mix everything.
Grate carrots.
Grate yolks too.
Salad divided into balls, roll in greens, yolks and grated carrot.

2. Cottage cheese croquettes with vegetable salad


For croquet:

  • 500 g of cottage cheese
  • 1 small carrot
  • 1/2 bunch of dill
  • handful of chopped walnuts
  • 1 tbsp. l vegetable oil
  • 1 yolk
  • 1 tsp cumin
  • a pinch of salt.

For vegetable salad:

  • 2 fresh cucumbers
  • 100 g of radish
  • 1/2 bunch green onions
  • 1/2 bunch parsley
  • lettuce leaves.


Put the cottage cheese in a bowl, mash with a fork. Add grated carrots, walnuts, chopped dill, vegetable oil, salt. Mix well.
From the resulting mixture with wet hands, make croquettes in the form of balls, put in the fridge for half an hour.

Put lettuce leaves on a dish, put cucumber and radish circles on top of lettuce leaves, sprinkle with chopped green onions and parsley.

Put the curd croquettes on the prepared vegetable salad, sprinkle with grated yolk and cumin.

3. Potato balls for side dishes


  • 800 g potatoes
  • 50 g butter
  • 1 raw egg for mashed potatoes
  • red and black pepper, salt to taste
  • 40 g wheat flour
  • cooking oil for frying


Wash the potatoes, peel, boil until half cooked and drain the water.

Not allowing to cool, quickly and thoroughly pound a wooden pestle. Add the pre-melted hot butter, raw egg, salt and pepper to taste, carefully rub and mix again.

Form small balls of warm mashed potatoes. Roll them in flour of the highest grade.

Heat the vegetable oil to a boil in a large frying pan with high sides or in a saucepan and fry the potato balls in it to golden brown.
Serve hot, garnished with fresh herbs.

4. Appetizer "Cheese"

Cheese, eggs rubbed on a small terke. Squeeze a clove of garlic, walnuts into the resulting mass, add a spoonful of mayonnaise to the mass, mix everything thoroughly.

From the resulting mass we form balls.

Roll balls in crab sticks.

Ready snack to put in the cold for 1 2 hours.

P. S. Spicy lovers can add more garlic and pepper. Also Rafaelki can be made with chopped greens, and olives / olives inside !!!

five . Elegant cheese balls for the festive table


  • Cheese
  • Garlic
  • Mayonnaise
  • Olives
  • Almond nuts
  • Dill

1. Grate the cheese (any) on a fine grater and add very finely chopped garlic.
2. Then add a bit of mayonnaise to the mixture to obtain a plastic mass, knead well and mix.
3. In the middle of each olives to put on almond nut.
4. Roll balls from curd, putting stuffed olive inside each ball.
5. Wash the dill, dry it very well and chop finely. The drier the dill is and the finer the cut, the more convenient it is to bread the balls.



  • Russian cheese 200 g
  • Crab sticks (frozen) 4 pcs
  • Garlic cloves 2 tooth.
  • Mayonnaise (to make a mass of medium density)

Grate the cheese, add the garlic, squeezed through a press, mix with mayonnaise.
Crab sticks, grate on a fine grater.
From curd, roll balls and roll in crab chips.

7. Rice balls with cheese


  • Long rice - 1,5 glasses
  • Hard cheese - 100 g
  • Chicken broth - 1 cup
  • Onions - 1 pc
  • Garlic - 2 cloves
  • Breadcrumbs - 100 g
  • Flour - 150 g

Stage 1.
In a saucepan bring 1.5 cups of water to a boil; when the water boils we put the rice, cook under a closed lid without disturbing for 10 minutes.

Stage 2.
In butter, fry the finely chopped onion and squeezed garlic, when the onion is browned, add rice and half a glass of broth to it, stirring gently. When the whole broth is absorbed, add the remaining half a glass and again stir until the rice is completely absorbed. When the second part of the broth is absorbed, add the grated rice, stir until smooth, extinguish the heat and let cool.

Stage 3.
Lightly moisten hands and form rice balls. Roll down first in flour, then in breadcrumbs. Put the balls in the fridge to freeze for 1 hour.

Stage 4.
Heat the butter in a pan, spread the balls in one layer and fry.

8. Vegetable snack balls


  • Beets - 2 pieces
  • Carrots - 3 pieces
  • Low-fat cheese - 100 grams
  • Eggs - 2 pieces
  • Prunes - 50 grams
  • Nuts - 50 grams
  • Natural yoghurt - 200 grams
  • Salt - to taste

Cooking method:
Cook carrots, beets until cooked. Cool, clean.

Eggs also boil, cool, peel. Separate the whites from the yolks.

Cheese grate on a fine grater, divided into two portions.

Beet and carrot grate separately on a fine grater and mix with grated cheese and beet and carrot separately.

To beets add grated egg yolk, yogurt.
To carrots - grated protein and slightly chopped garlic, yogurt.

From beet mass to form balls, inside of which roll a piece of prune or walnut. From the carrot the same, inside a piece of prune or walnut.

If the mass is not enough wet and badly stick together in a ball, add a little yogurt.
Put the balls on a flat dish, top with yogurt and herbs. Put for 30 minutes in the fridge.

You can add olives instead of prunes or walnuts.

9. Snack - Balls with Brinza and Tomatoes


  • Sheep cheese - 200 g,
  • Cherry tomatoes - 150 g,
  • garlic 2 clove (pressed through a press),
  • ground pepper to taste
  • soft cheese - 2 tbsp. lt
  • butter - 1 tbsp,
  • fresh bunch of dill / parsley,
  • roasted sesame - as needed.

Chop cheese, mash with a fork, add cheese or softened butter, garlic, black pepper. Stir until smooth and form balls. Prepared tomatoes should be placed inside the mass, gently add the balls and roll in chopped parsley or dill. It is better to take dill (I know from practice), and then in sesame. Refrigerate for 30-40 minutes. The snack is ready.
